There are different types or subspecies of garlic, most notably hard-neck garlic and soft-neck garlic. The latitude where the garlic is grown affects the choice of type as garlic can be day-length sensitive. Hard-neck garlic is generally grown in cooler climates; soft-neck garlic is generally grown closer to the equator. The leaves, and flowers on the head are also edible, and being milder in flavour than the bulbs [sic]. The root cluster attached to the basal plate of the bulb is the only part not typically considered palatable in any form. Allyl methyl sulfide cannot be digested and is passed into the blood. It is carried to the lungs and the skin, where it is excreted. Since digestion takes several hours and release of AMS several hours more, the effect of eating garlic may be present for a long time.
